Small taproom focused on wood fermented beers
Located in Downtown Canton, OH
The Woodshop is a project by UnHitched Brewing Company focused on the fermentation of beers in wooden vessels. Fermentation will take place in foeders and other smaller oak barrels. Our primary emphasis will be crafting distinctive lagers, saisons, and sours.
The brewing process begins at our main facility in Louisville. Following the initial stages in the brewing process, the wort undergoes cooling and is transported to the Woodshop where it is transferred into the wooden fermentation vessels. Yeast is introduced, and the real magic takes place.
The Woodshop is located inside the Deli Ohio building one block from Centennial Plaza in Downtown Canton.
As part of your experience at the Woodshop, you will be able to grab a beer and a sandwich during the day. And at night, Mike’s Pizza will be dishing out some delicious NY style pies and other pizza shop comforts.

beverage philosophy
We proudly source 100% of our beer ingredients from Midwest farms and processors within a 400-mile radius of our taproom, a commitment shared with our sister brewery, UnHitched. Our trusted partners include Haus Malts, Sugarcreek Malts, Mahoning Valley Hops, Barn Talk Hops, Auburn Acres, and Zachrich Hop Farm, with custom yeast blends crafted by Omega Yeast in Chicago.
Our draft list features a blend of UnHitched staples alongside our unique Woodshop brews. As we continue to grow, more tap lines will showcase our distinct wood-fermented beers, with most undergoing fermentation and aging for 12 months or more.
Complementing our beers, we offer Italian-inspired cocktails and wines that pair perfectly with the flavors from our neighbor, Mike’s Pizza.
